Smashed Chickpea Salad

1 15 ounce can of chickpeas

2 tablespoons chopped black olives

1 tablespoon thinly sliced red onion

1 tablespoon chipped fresh parsley

zest and juice from ½-1 lemon

salt to taste

freshly ground black pepper to taste

3 tablespoons extra virgin olive oil

lettuce greens (you can use any but arugula works well)

How to make this recipe

  1. Slightly smash the chickpeas with a fork or potato masher
  2. Mix all ingredients together in a bowl.
  3. Add olive oil and mix slightly.
  4. Place over a bed of lettuce.
