Peanut Sauce for Noodles

 Makes 1 cup                                    

Ingredients

1 cup cilantro

6 large garlic cloves

2 tablespoons ginger

3 tablespoons peanut oil

6 scallions

1 tablespoon dark sesame oil

1 tablespoon hot chili oil

1/2 cup peanut butter

1/2 cup soy sauce

3 tablespoons sugar

3 tablespoons rice vinegar

Instructions

1) Remove leaves from the cilantro.   Discard the thicker stalks.

2) With a large chefs knife, smash the garlic.  Discard the skin.  Peel the ginger.  Cut it into coin shapes.

3) Place the cilantro, garlic and ginger in a food processor.   Puree until all of the ingredients are chopped finely.  Add remaining ingredients and puree until it makes a thick sauce.

4) Mix into 1 pound cooked pasta egg noodles or somen noodles.
